Manchego takes its name from the rustic and exclusive Manchega sheep breed, raised in the arid region of Castilla-La Mancha, Spain.<\/span><\/p>\n Its rosemary version elevates this traditional cheese by combining the intensity of sheep’s milk with the delicately fragrant freshness of this Mediterranean plant.<\/span><\/p>\n The production of Manchego respects ancestral craftsmanship. After renneting, the curd is cut, stirred, then molded into cylindrical shapes that give it its famous braided patterns on the sides and its wheat ear design on the faces. The wheels are then immersed in a brine bath to develop their flavors while regulating their moisture. <\/span><\/p>\n During the final months of aging, which generally extend from three to six months, the cheese is often brushed with olive oil before being generously wrapped in dried rosemary leaves.
