Throughout the month of May, tarte flambée is featured on the menu of our shop-restaurant.

Called “flammekueche” in Alsatian, this specialty originating from Alsace also has its ancestors in Baden-Württemberg, just across the border in Germany.

This traditional dish dates back to the Middle Ages, when farmers used it to test the heat of their bread ovens. The base of the tart is a thin dough, spread on a tray, topped with crème fraîche, sliced onions, and bacon.

It is baked at a high temperature, which gives it a crispy texture and a unique flavor. Served as an appetizer or main course, it is best enjoyed with a glass of white wine.
