Kaempff-Kohler – “E Stéck Lëtzebuerger Gastronomie”
Today: “Rieslingspaschtéit”
As Luxembourg’s National Day on June 23 approaches, Kaempff-Kohler invites you to rediscover, throughout the week, some of the great specialties that make up the rich culinary heritage of Luxembourg, all available in our product range.
To kick off this culinary journey, you simply can’t miss the famous “Rieslingspaschtéit,” the Riesling pâté created in 1928 by Pierre Kaempff, the company’s founder.
Legend has it that Pierre Kaempff loved meeting up with his friends over a glass of Riesling after work. One day, they asked him to create a little treat to share to accompany their convivial moments. That’s how this iconic recipe was born.
His grandson Christian Kaempff recalls:
“He would marinate veal and pork for 48 hours in Riesling with herbs and spices. The mixture was then shaped into a small sausage, wrapped in pastry, and finished with a delicate Riesling jelly.”
Nearly a century later, this simple, generous recipe continues to delight lovers of Luxembourg’s culinary traditions and remains one of Kaempff-Kohler’s signature products.
One detail has, however, evolved over time: today’s Riesling no longer has the very acidic, tannic character it had in the 1920s. To preserve the authenticity of the original taste, Kaempff-Kohler now works with a winemaker who produces a special Elbling, closer to the aromatic profiles of the past.
Thanks to this expertise and loyalty to the original recipes, the spirit of “Rieslingspaschtéit” remains intact, carrying on a unique culinary heritage.
Tomorrow, continue this journey into the heart of Luxembourg flavours with a new iconic speciality.
