Indeed, herring is at its most flavorful just before the spawning season.
Caught in the Atlantic and northern seas, this fish is particularly rich in Omega 3, proteins, vitamins, and minerals, making it a very healthy and balanced dish.
Moreover, this species is not endangered, as herring is abundant and shows no signs of depletion.
We prepare our herring fillets with cream, onions, a touch of coriander, golden apples, and hazelnuts.
