Vinegar to drink and refine sensual foods that nourish both body and mind? This is the historic challenge set by the Wiedemann family, winemakers along the wine route of South Palatinate in Venningen, Germany.
The historic estate owes its name to Dr. Florence of Venningen, who was already praising the benefits of vinegar in 1616.
Today, the residents of Doktorenhof, the family of Georg Viedemann, also winemakers, cultivate vines to produce this unexpected yet luxurious product… vinegar meant to be consumed.
This drink, resulting from the work of the grape, is the culmination of a passion for producing noble elixirs from precious wines.
The pleasure comes from the slowness of the process: the wine rests for one to two years on a vinegar mother (also known as the vinegar “mushroom”), which has been used by the family for over 150 years, before being transferred to oak barrels for 15 years.
Finally, the cellar master enhances the product with natural herbs and spices directly from the estate’s spice room.
The result: a range of more than thirty almost alcohol-free vinegars, to be enjoyed as an aperitif or digestive, presented in an elegant long-necked bottle that evokes the delicacy of the product.
Distinctive flavors and aromas invite a journey. Some of the names directly reference the grape varieties from which the wines originated, such as “Riesling,” “Gewürztraminer,” “Weisser Burgunder,” while others draw from the realms of symbolism, romance, and exoticism: “Balsam of Roses,” “Tau der Trauben,” “Paradisius,” “Tränen der Kleopatra,” “Purple Elephant,” “Dancing Mocca,” “Giacomo Casanova”…
