What can inspire a cheesemaker to come up with a unique product and find the appropriate name for it?
For the craftsman of the Eeke cheese factory, in the Hauts-de-France region not far from the Belgian border, the idea came from a field of poppies near the farm where he goes to collect his milk:
“One fine morning, while waiting for the milk from the milking to flow into the tank, I see beautiful flowers growing next to the wall: poppies…”.
The place is known by the Flemish name of Baeck Houk, where a bread oven had been installed at the time. The name was found; all that remained was to make the cheese.
Baeck Houk is an uncooked pressed unpasteurized cow’s milk cheese, aged between 4 and 8 weeks. It comes with a rustic crust. The pretty purple marbling comes from dried poppy petals, boiled for 2 minutes and added directly into the curd.
This very soft cheese is enriched with roasted poppy seeds. Not only do they add a pleasant crunch, but also a light smoky taste of hazelnuts, coffee and chocolate, while the poppy petals bring a spring floral touch.
