When the cobblestones of Place Guillaume warm up in the summer sun, the terrace at Komptoir K’ has become one of the most delightful culinary stops in the city centre. In the shade of the parasols, in an atmosphere At Veuve Clicquot, set against the hustle and bustle of the capital, time seems to slow down, giving way to the pleasure of fresh, generous and seasonal cuisine.
This summer, the chef is celebrating the sunny days with four salads that are every bit as good as a proper gourmet meal. colourful, well-balanced and flavourful dishes, designed to accompany sunny lunches.
The ‘Poulet Let’z’ puts a new spin on the famous Caesar salad with a chicken fillet cooked at a low temperature, 24-month-aged Parmesan, a hard-boiled egg, golden croutons and a creamy Caesar dressing.
Lovers of Mediterranean flavours will be won over by the ‘Niçoise’, enhanced by grilled bluefin tuna, sun-kissed tomatoes, crisp green beans, caramelised peppers, a hard-boiled egg, anchovies and the ever-present Kalamata olives.
With a more plant-based focus, the ‘Buddha Bowl’ combines organic bulgur wheat, pumpkin falafels, cucumber, mango, soya beans and avocado in a dish that’s as fresh as it is generous.
Finally, the ‘roasted farmhouse goat’ plays the originality card. Served on crispy toast, it is accompanied by raspberries, pistachios, pickled red onions and Red Love apples, creating a subtle blend of sweetness, tartness and character.
