Our cheese shop in the city centre is currently showcasing four goat and sheep’s milk cheeses from the organic farm “Baltes” (Bio-Haff Baltes) in Stegen:
Two “Geesekéis” with washed rind that bring back memories of munster and camembert, a sheep’s milk cheese similar to Corsican sheep’s cheese, or a fresh goat’s cheese.
Baltes farm, which introduced organic farming in 2001, turned to goat breeding and the organic production of goat’s cheese in 2005.
This modern agricultural company not only has a hay drying system to produce its own fodder, but also breeds Icelandic horses and Australian shepherds.
