This week, our cheese shop team takes you to Switzerland, more precisely to the Appenzell region, for a tasting of an exceptional cheese infused with the typical flavors and aromas of its terroir.

In Switzerland, the cultivation and harvesting of aromatic and medicinal plants are mainly established in mountainous regions.

The preserved valleys offer rich soil and optimal sunshine. They are blessed with a very particular climate, characterized by pure air moving in the form of a light, refreshing breeze.

The multitude of herbs growing in the alpine regions, particularly in the Fribourg Pre-Alps, offer an infinite variety of fragrances and therapeutic properties.

In the 8 Blumen, our fresh and creamy tomme from the Koch cheese dairy, there are eight flowers that give it its unique colorful appearance and subtle aromatic notes: marigold, dandelion, cornflower, mallow, rose, hay, safflower, and strawberry.

The fragrances of these petals diffuse into the paste and give this cheese unique nutty and floral flavors. Its bloomy rind is edible too!

The 8 Blumen is a cooked pressed cheese made from thermized cow’s milk.

It is aged for a minimum of 90 days.
