Délice de Pommard: a Burgundian delight with a unique character
Off to Burgundy with a cheese creation as generous as it is original: Délice de Pommard, a triple-cream cow’s milk cheese created in 1996 by master cheesemaker Alain Hess in Beaune, Côte-d’Or.
Crafted from pasteurized cow’s milk enriched with fresh cream, Délice de Pommard captivates from the very first taste with its exceptional texture. Its curd, delicately drained in a cloth, gives it its characteristic shape and a white, moist, airy, and incredibly creamy paste, almost as melting as butter.
On the palate, its full richness is expressed with subtlety. Its lactic freshness, accompanied by a slight tangy hint, brings a beautiful balance to its generous creaminess.
But what makes Délice de Pommard particularly unique is its coating. Unlike traditional cheeses with a rind, it is entirely rolled in aromatics that create a true flavor signature.
Among its variations, the Beaune mustard bran version remains the most iconic. This coating brings delicately spicy notes and a slightly crunchy texture that contrasts wonderfully with the cheese’s melting heart.
