The Pavlova, made with meringue, crispy on the outside and soft on the inside, was according to legend invented a century ago, in the 1920s, in a hotel in Wellington, New Zealand, as a tribute to the Russian ballerina Anna Pavlova.
In any case, the pastry chef, inspired by the lightness of the Prima Ballerina’s step, created a delicious dessert that has since graced fine tables around the world.
For you, our pastry chef Jonathan Szymkowiak found his own inspiration by creating a Pavlova with a fresh mango heart, accompanied by a light Bourbon vanilla cream and enhanced with lime zest and coconut chips.
