Pulled pork is undoubtedly part of the Holy Trinity of North American barbecue, alongside spare ribs and beef brisket.
The pork shoulder or pork butt is placed in the barbecue smoker after being rubbed with a “rub”, a spice blend.
It is smoked for 10 to 15 hours at a temperature between 100°C and 130°C. If necessary, basting sauces are applied along the way. Finally, the roast is glazed with a barbecue sauce.
Slow cooking at low temperature gives this delicately shredded piece of meat its unique flavour and tenderness.
