This month, we are offering a rarity: a Swiss Alpine Gruyère, hand-made in copper cauldrons, in the traditional manner of the Maîtres Armaillis (“master cheesemakers” in Gruyère patois).
Our exceptional cheese comes from the Chalet de Vounetz, an 18th-century farm located at an altitude of 1,612 meters in the municipality of Charmey, in the Gruyère district, one of the seven districts of the canton of Fribourg in Switzerland.
Swiss cheesemakers specializing in this type of farmhouse production practice their craft in their chalets each year between May and October. During this period, they produce only two to three cheeses per day.
The exceptional quality of Alpine Gruyère is due to the exceptional quality of the milk from cows that graze throughout spring and summer in their high-altitude pastures, with their distinctive slopes and typical flora, and of course, to the master cheesemaker’s expertise.
All these factors give this particular cheese its very smooth, buttery, and delicate texture and its subtle smoky flavor.
Swiss Alpine Gruyère made from pressed raw cow’s milk – vintage 2022 – is available in our stores throughout the month of March.
