Kaempff-Kohler shops offer homemade foie gras or foie gras from the traditional Maison Feyel-Artzner in Strasbourg, born from the merger of the two greatest families in the history of Strasbourg foie gras.

Every foie gras sold at Kaempff-Kohler is the result of artisanal preparation.

The raw duck and goose livers are selected and sorted by the respective chefs. The product is first cold-deveined, then seasoned with a secret spice blend, unique to each artisan.

The fresh foie gras is gently cooked at a low temperature. It can be presented in a terrine, wrapped in a cloth (torchon), or as a loaf.

The semi-cooked (mi-cuit) foie gras is prepared at a higher temperature (80°C at the core), which gives it a firmer texture. This variation is most often sold in a jar or a tray.

At Kaempff-Kohler, Artzner foie gras is presented in a jar, wrapped in a cloth, or in a tray.

The homemade Kaempff-Kohler duck foie gras is sold in blocks or terrines. It is also found as a classic starter on the Christmas menu, accompanied by homemade onion confit, artisanal brioche and Riesling jelly.
