Fancy trying a cheese that’s as original as it is elegant? Fromagerie Kaempff-Kohler invites you to savour the Tomme with lemon, pepper and ginger, also known as ‘Gingerpeppe’ or ‘Ingwerpepe’.
Originating in Switzerland, this raw-milk tomme, made from the milk of cows fed on grass and hay, is a creation by Kevin Koch, a Swiss cheesemaker renowned for his innovative approach and his penchant for bold flavour combinations. At the family-run Koch company, based near Appenzell, artisanal tradition and exceptional ingredients have been coming together for over 50 years to create ‘bespoke cheeses’.
Matured for 2 to 3 months, this tomme is part of the ‘Haute-Couleur’ collection, a range that celebrates originality and precision in flavour combinations.
Its secret lies in a remarkable interplay of contrasts. The Ginger and pepper deliver a lively, slightly spicy freshness from the very first bite, whilst the lemon balances the whole with a hint of tartness and a delicately fragrant finish.
Its distinctive flavour makes it the perfect cheese to serve as a surprise at a pre-dinner drinks party or put together an original cheese platter. To make the experience even more enjoyable, our cheesemongers recommend serving it with a an aromatic and fruity white wine, such as a Pinot Gris.
