Exciting news from Kaempff-Kohler Fromagerie!

The Kaempff-Kohler Fromagerie is ready to welcome the new Mont d’Or.

This cheese, originating from the Haut-Doubs mountains in Franche-Comté, is made from raw cow’s milk.

It’s a soft cheese, supple and melting, which becomes very creamy, even runny, at room temperature…

…and it’s seasonal, as its production is regulated. Mont d’Or is only produced between August 15 and March 15, and then sold until May 10.

This particularity is explained by the fact that harsh winters made the production of large Comté wheels difficult and milk less abundant, prompting farmers to create this smaller, more flexible cheese, better suited for winter ripening.

Mont d’Or enthusiasts appreciate its creamy, slightly salty taste, with flavors of butter, hay, mushroom, and the characteristic resinous woody notes of spruce, the wood used for the strap that surrounds it.

Thanks to its very soft and melting consistency, Mont d’Or is often served with a spoon, or even hot, in its box.
