In our Take Away section, it is still the season for comforting winter dishes, especially at the start of the year when hearty cuisine dominates the table to help face the cold. The trend is for “comfort food” that warms the heart and soul, with a strong focus on melted cheeses, gratins and slow-cooked stews.
The ham and endive roll (or endive gratin) fits perfectly into this category of traditional comforting dishes. It is particularly popular in Belgium, Northern France and here at home. The recipe consists of endives cooked in butter and lemon, which are then wrapped in herb-cooked white ham, before being topped with béchamel sauce and browned with cheese.
