In the interpretation of Kaempff-Kohler’s chefs, the salmon heart is delicately placed on a vibrant green cabbage leaf. This base is then enriched with a savory mixture of rice, mushroom duxelles, and finely prepared leeks.
While originally, Koulibiak was wrapped in a brioche dough, the Western version today favors a golden and crispy puff pastry, bringing lightness and finesse to the whole.
Upon tasting, the salmon reveals all its richness with its delicate, iodized notes. The mushroom duxelles brings a woody and umami depth, while the leeks soften the ensemble with a subtly sweet touch. The cabbage leaf, for its part, adds a more rustic and authentic vegetal dimension.
