The Blackberry’s Radiance

The wild blackberry is the king of late-summer fruits. A local and plentiful fruit, it is picked from brambles along the wayside from July to October, with the peak season being August to September. A small, black, juicy fruit with a delicate tang, it lends pastry creations a rich fruity flavour and a subtle woody note.

That is the very essence of L’Éclat de Mûre, the creation of the month for September devised by the pastry chefs at Kaempff-Kohler.

Beneath its elegant black exterior lies a tartlet that is as surprising as it is indulgent. Its shortcrust pastry base, made with activated vegetable charcoal, is filled with a creamy almond cream, then delicately decorated with tiny pearls of candied lemon and a light, airy blackberry ganache, itself filled with a centre of candied blackberry.

This innovative dessert offers both a visual contrast and an explosion of flavours.

Its deep black colour intrigues at first glance. It comes quite simply from the activated vegetable charcoal mixed into the shortbread dough. Whilst it does not impart any particular flavour, it helps to preserve the authentic, delicate taste of a traditional shortbread whilst giving it a decidedly contemporary look.

On the palate, L’Éclat de Mûre plays on contrasts and textures: the crumbly crunch of the shortbread meets the rich, velvety smoothness of the almond cream, enlivened by the tangy freshness of the lemon confit. The blackberry ganache then adds a touch of lightness and creaminess, before giving way to the intense fruitiness of the blackberry confit.

A refined, fresh and indulgent creation, where every mouthful reveals a new balance.
