Belgian National Day, celebrated on July 21, commemorates the oath taken by Leopold I, the first King of the Belgians, on July 21, 1831. This day marks Belgium’s independence, following the 1830 revolution.
While our neighbors are known for fries and mussels, which together take the name of “complet belge” in the national gastronomy, the small kingdom is also renowned for a pastry specialty.
Liège waffles, known for their soft texture and sweet flavor, have a rich and fascinating history. According to legend, they were born in the 18th century when the Prince-Bishop of Liège asked his cook to create an original and delicious dessert. The chef then had the idea of adding pearl sugar to a brioche dough, thus creating the Liège waffle as we know it today.
It is precisely the crystallized sugar that gives the caramelized taste. The smell of a Liège waffle cooking in the waffle iron is incomparable.
Cold or hot, it provides delicious sensations. It is a culinary delight that always leaves you wanting more.
