Cheese corner: lemon, pepper and ginger tomme

This extraordinary cheese was created by Kevin Koch, an emblematic cosmopolitan and innovative Swiss cheesemaker, from the family business of the same name, located near Appenzell in Switzerland.

For over 50 years, this traditional house has combined craftsmanship and noble ingredients to produce “tailor-made cheeses”.

Its lemon, pepper and ginger tomme, which bears the resonant name “Gingerpeppe“, is produced from raw cow’s milk and aged for 2 to 3 months.

This cheese, which belongs to the “Haute-Couleur” collection (very close to haute-couture), achieves perfect harmony through a successful play of contrasts: the ginger and pepper open the palate with their spicy freshness, while the lemon offers a delicious finish.

The “Gingerpeppe”, a culinary moment not to be missed in our cheese shop in the city center!
