Cheese Pick of the Week: Summer Beaufort

It’s Summer Beaufort time!

This Savoie cheese, a cooked and pressed cheese with a melt-in-your-mouth texture, is only produced from June to October, when the cows graze in the high pastures.

Winter Beaufort, in contrast, is produced when the animals are fed hay.

It has a fruity taste, a melt-in-your-mouth texture, and subtle aromas. It is generally aged for 5 to 12 months, depending on the cheesemakers.
