Sainte-Maure de Touraine AOP is a raw goat’s milk cheese with a natural rind and an ivory-white, soft paste, offering a smooth and fine texture.
It is easily recognizable by its log shape, measuring between 15 and 17 cm in length, and by the engraved rye straw running through it, bearing the name of the appellation to certify its origin. Its rind is covered with a light blue mold.
Sainte-Maure de Touraine has a mild goaty aroma.
When young, it has a smooth texture and a delicate hazelnut flavor. However, as it matures, its taste becomes more pronounced.
The Sainte-Maure de Touraine appellation has been protected by a regional label since 1978.
It is considered one of the five star cheeses of the Centre-Val de Loire region.
