Fresh, creamy and delicate, the Thym Tamarre de Provence captivates with its elegance and character.

This small Provençal goat cheese, emblematic of its region, is renowned for its aromatic delicacy. It is made from raw milk from Rove goats, known for the richness of their fat content and the aromatic diversity of their milk, linked to a garrigue diet.

Thym Tamarre is distinguished by its characteristic oblong “shuttle” shape (oval and elongated), topped with a fresh thyme sprig. It is this sprig that gives it its name and delicately perfumes its rind.

Its white, slightly moist paste evolves during the ripening process, which varies from 1 to 7 weeks. It can thus be enjoyed young, for its freshness and sweetness, or more aged, for drier, more full-bodied flavors.

On the palate, its great freshness, creaminess and delicacy are appreciated.. The goat notes are accompanied by a herbaceous scent of thyme, offering a typically Mediterranean ensemble.

Thym Tamarre is ideal as an aperitif, in a salad or on a platter, paired with Southern flavors.
