Kaempff-Kohler’s Culinary Creations: a Paris-Brest Revisited in a Savory Version
We all know the famous Paris-Brest dessert, created as a tribute to the cycling race of the same name. At Kaempff-Kohler, this crown-shaped pastry, reminiscent of a bicycle wheel, made of choux pastry filled with praline mousseline cream and sprinkled with slivered almonds, experiences a second birth… in a savory version.
Our chef, Fanch Delanoë, has created a new filling that is as bold as it is inspired.
The sweet cream gives way to a delicate mackerel rillette, while the almonds are replaced by a refined mix of samphire, cucumber, and red radish: a harmony of maritime flavors that enchants the taste buds of fine gourmets.
This savory Paris-Brest is one of the new starters on our catering menu.
