In June, our cheesemaker takes you to Switzerland, more precisely to the Bernese Oberland, to taste an exceptional cheese imbued with the typical flavors and scents of its terroir.
In Switzerland, the cultivation and harvesting of aromatic and medicinal plants is mainly established in mountain regions.
The preserved valleys offer rich soil and optimal sunshine. They thus have a very particular climate, with pure air moving in the form of a light refreshing wind.
The multitude of herbs that grow in the Alpine regions, particularly in the Fribourg Pre-Alps, offer an infinite variety of scents and therapeutic virtues.
In Bergblümen, our fresh and creamy tome from the Hohgant cheese factory, there are eight flowers from the Bernese Oberland which give it its unique colorful appearance and its subtle aromatic note: marigold, dandelion, cornflower, mallow, rose, hay, safflower and strawberry.
The scents of these petals diffuse into the paste and give this cheese unique flavors.
Its taste is sweet with hazelnut and floral flavors – its bloomy rind is made to be eaten!
Bergblümen is a hard pressed cheese made from thermized cow’s milk.
It is matured for a minimum of 90 days.
