Toggenburg is a valley located on the upper reaches of the River Thur in the Swiss canton of St. Gallen. This mountainous and forested region with green meadows is the home of our cheese of the month, the “Bärlauchkäse”, a wild garlic cheese.
This artisanal product with a fine, delicate and tender texture is matured at the traditional Traber cheese factory in Kirchberg, in the canton of St. Gallen.
Traber cheesemakers focus on handcrafted and local products. Their wild garlic cheese is made with hand-picked wild garlic from the region’s Swiss forests. This semi-hard paste cheese made from unpasteurized cow’s milk is matured for at least three months in the traditional cellars of the cheese factory.
The “Bärlauchkäse” is now available at our cheese shop in the city center, in our shop in Niederanven and at BREAKK in Kirchberg.
