Historically, hunting was a noble privilege.
Today, game is associated with year-end holiday meals, for its festive and luxurious character, its nutritional quality and its distinctive flavor.

With its more pronounced and robust taste, venison is sure to delight the most demanding palates.. Roasted, stewed or braised, this type of meat is suitable for all uses.

Kaempff-Kohler highlights the most prized species, namely roe deer, hare and hind.

The roe deer is presented as medallions with Grand Veneur sauce, made from a rich, creamy red wine reduction.

The hare, which has a stronger and drier flesh, is prepared as a Luxembourg-style civet. It is sautéed in butter, moistened with red wine, seasoned with chives and onions, and thickened at the end of cooking with the animal’s blood.

The sautéed hind fillet, renowned for its tender texture, is marinated in red wine and served with cranberries for a slightly acidic note.

Our terrines, served with a generous slice of rustic bread, a gherkin and a little mustard, are perfect as a starter: country-style, roe deer with figs, and wild boar piglet, they enchant the palate with their full-bodied and wild taste that evokes the winter forest.
