Cheese and wine pairing: a meeting between Hauts-de-France and Provence

This month, our master cheesemonger is showcasing Délice du Dolloir with basil, a double-cream cow’s milk speciality made by Fromagerie du Dolloir in Chézy-sur-Marne, in the Aisne.

Its fine ivory rind, delicately covered with a light white bloom, protects a white paste that is smooth, dense and perfectly uniform.

On the nose, this cheese reveals subtle aromas of fresh milk and mushrooms. The insert of two regular lines of basil enhances its freshness and creaminess, bringing a herbaceous note that harmoniously balances its milky sweetness.

On the wine side, Château Les Crostes, a typical Provence white, lively, fruity and balanced, charms with its bright golden colour. On the nose, it reveals a bouquet of fruit, notably banana and pear, while the palate offers a liveliness that is both complex and indulgent.

This AOP Côtes de Provence is traditionally made from the Rolle and Ugni Blanc grape varieties.

Délice du Dolloir with basil and Château Les Crostes from Provence thus make up the perfect pairing for May at Kaempff-Kohler Cheese Shop.
