It may come as a surprise, but did you know that the croissant, although it is one of the best-known symbols of the French art of living, is said to have originated in Vienna, the capital of Austria. In 1683, the city was besieged by the Ottoman army, which was waiting for the right moment to invade it. The attackers were eventually pushed back and defeated. Legend has it that, to celebrate this victory, Viennese bakers created the kipferl in the shape of a crescent, echoing the crescent moon on the Turkish flag. However, this story is often considered a legend.
What we can say, however, is that the croissant evolved for the better in France to become the flaky viennoiserie we love so much.
The later addition of savoury fillings, including ham and cheese, was an innovation that won over many palates.
The recipe is easy! A croissant, cooked ham, grated cheese (as in Switzerland) or sliced (as elsewhere), all topped with a rich, creamy béchamel sauce, and you have a quick, indulgent and delicious lunch.
This week, the team at the Kaempff-Kohler city-centre boutique-restaurant has turned the ham and cheese croissant into a set menu, served with a glass of rosé or Pinot Noir.
