The rum baba, a great pastry classic, is a savarin soaked in amber rum enhanced with a generous dose of whipped cream.
However, it was not always like this.
In reality, we owe the rum baba and also the famous square in Nancy to the King of Poland Stanislas Leszczynski, future Duke of Lorraine.
In the 18th century, during his visits to his father-in-law Louis XV, Duke of Lorraine at the time, the king found the Kougelhopf he was served much too dry and asked for it to be soaked with Tokay wine.
In 1735, Nicolas Stohrer, a Parisian pastry chef, also a descendant of King Stanislas Leszczynski’s pastry chef, definitively established rum as the soaking liquid of choice for the famous savarin and definitively consecrated the rum baba as an essential dessert, not only in his pastry shop on rue de Montorgueil, but in general.
The Eminente rum baba by Kaempff-Kohler perfectly honors this long pastry tradition.
